Ten years since arriving in Johannesburg from Punjab, India and immersing himself in the restaurant industry, Jagjit Singh has successfully opened his latest venture - The Royal India, in Sandton.
The Royal India opened on 15 September 2014, and under the watchful eye of Mr Singh, is becoming the go to restaurant for authentic fine dining northern cuisine. Mr Singh wants to change people’s perceptions of Indian food – that it’s not only hot and spicy. He says that it’s more complex than that - that the tastes are layered and the sensations linger with the diner long after finishing the meal.
He is proud that the kitchen is in the capable hands of Indian chefs (one of whom he’s worked with since 2008), that the restaurant is under the experienced watch of Indian managers, that he personally trains his staff, and that there are no short cuts taken at The Royal India, for example whole spices are bought then ground and mixed as desired for each dish, and the rice is specially prepared separately for each particular dish.
The menu is extensive but Mr Singh suggests trying the butter chicken with vegetable pulao and peswari naan, or the Royal Special 1 or 2 where the chef will cook his specialty of the evening for you. He recommends ending the meal off with the popular sweet and cold beverage – a faluda (traditionally it’s made by mixing rose syrup with vermicelli, psyllium, jelly pieces and tapioca pearls along with ice-cream).
The restaurant can comfortably seat 170 walk-in guests, and has the capacity to host 200 people for events or functions. The upstairs VIP room seats 40 people and has a private entrance.
